21 Colibri Mourvedre Barrel Ferment
This small batch was culled from the rest because it underwent unique, small-scale fermentation and subsequent, special barrel ageing. The heads were removed from two 59-gallon (standard) barrels and the destemmed grapes were fermented in them with Arizona Oak staves inserted. The barrel ferment is generally a bit cooler than larger formats and ends up accentuating fruit while the contact with wood during primary fermentation also improves color and structure. Additionally, this wine was aged in barrel on Arizona Oak for another 8 months lending subtle dark caramel and baking spices to the mix. Unique and special this wine is!
