Arizona Counoise
Counoise (pronounced coon-whaz or whah) is a relatively unknown grape used in Southern Rhone blends with such notable bedfellows as Grenache, Syrah and Mourvedre. (The only Rhone house that I have ever seen bottle a pure Counoise was Chateau Beaucastel. This Cochise County Counoise is lithe and pretty with lots of cranberry, rhubarb, chalk, granite and just a hint of white pepper and lime zest. Enjoy it slightly chilled in place of Pinot Noir or richer Roses.
