The Stillness is a reflection of who we are as winemakers.  It is a combination of our love and respect for old world winemaking traditions, our obsession with Champagne, and the pioneering spirit that champions the Arizona wine industry. “Blanc de Noir” is a term traditionally used to describe sparkling white wine made from red or “black” grapes.  When the elements in 2015 forced our hand to pick a beloved red block before ideal ripeness, we chose to press the batch, and treat it like a white wine, rather than manipulate it into something it wasn’t. The wine became a favorite among our winemakers and members alike, so we carried the Stillness tradition forward into current vintages.  The name Stillness implies not only an absence of bubbles, but the intent to slow down, taste with intention, and discover nuance and complexity.
